
Cantine Paolini has a history spanning over half a century that began in 1964 in Marsala, the westernmost city in Sicily. In a fertile territory for the cultivation of vines and for cooperation, a group of far-sighted winemakers decided to join the individual forces and skills to enhance the most suitable soils and improve the production of grapes into wine. In 1972 the first harvest took place and since then the path of the Cellar has been in continuous expansion.
The rural centre once inhabited by winemakers is located in the Paolini district, from which the winery takes its name. The origins of the name are even older, dating back to the beginning of the 16th century when the Paolotti monastic order began to cultivate vineyards in the same places as today.

TERROIR
The Paolini vineyard is a mosaic of three thousand hectares, whose tiles extend on the eastern and southern slopes of the municipalities of Marsala, Trapani, Salemi and Mazara del Vallo. Our territories have a high vocation for viticulture which can express its potential in the sensorial manifestation of the entire production.
The perfect soil and climatic conditions of the Marsala area make the soil structure extremely rich and heterogeneous: in the seaside vineyards the marine saline microclimate prevents the development of mould and the unstoppable wind favours the mitigation of the high summer temperatures by preventing the stagnation of humidity; in the vineyards of the valley the growth of the vine is favoured by the presence of humus and calcium which gives complexity to red wines and by the richness of skeleton which gives aromaticity to white wines.
The ideal conditions in the Marsala area for growing vines are also due to the typically sunny and extremely windy climate. The winter rains and the temperature ranges of the summer nights allow the grapes to ripen optimally. These conditions prove to be crucial for defining high vocations with specific potential in the sensorial expression of production.
