Variety: Sangiovese, Canaiolo, Colorino
Winemaking: Harvested late, by hand from a single vineyard at steep hillside at 580 metres above sea level, after a second grape quality control, it macerates 20 days at a controlled temperature of 28-30°C with soft extraction process and frequent punch-downs. It then ages 12 months in French barriques and tonneaux new and first use.
Tasting notes: Ruby, towards garnet-brick. On the nose black cherry, spices, pepper, leather and tobacco. Ripe, silky tannins that contribute to a full body but still with freshness and complexity. Very long and persistent finish.
Pairing: Perfect with any beef roast or steak.
