CANTINE PAOLINI GRILLO TERRE SICILIANE BIO (Organic) 2021

Variety: 100% Grillo
 
Winemaking: the grapes are subjected to soft pressing and the slow fermentation takes place at a temperature of 15°C for about 15 days. Once the maturation in steel vats has taken place, the wine follows a period of refinement of three months in the bottle. No sulphites are added and there are no traces of fermentation yeasts, these elements are replaced with substances obtained naturally.
 
Tasting notes: the colour is a pale straw yellow, with a fruity aroma with slight notes of Sicilian citrus fruits. On the palate it is clean and light, with a fragrant flavour and a good level of acidity.
 
Pairings: ideal with first and second courses of fish, grilled and stewed vegetables.
